Award Winning Chef Don Walker

Chef Don is now Executive Chef for Javelina Leap Vineyard & Winery creating menus for our private wine club events, tapas, appetizers and hors d’ oeuvres such as Lavender Guacamole Dip ( one of the Winemaker’s favorites ). Recently Chef Don was runner up in the 2013 National Food Competition in the “Dips & Spreads” category for his sensational Lavender Manchego Dip created exclusively for Javelina Leap Vineyard & Winery.

Chef Don Walker has been in the food and beverage industry for over 20 years, owning his first establishment in 1992- an award winning restaurant in Dayton , Ohio. upon moving to Arizona in 1994 to help operate family business owned by his father, since 1957. Millstone Inc. was a commercial bakery multiple restaurants/outlets, catering to 400 grocery stores nationionally & internationally. After leaving Millstone, Chef Don was Food & Beverage Director at Yavapai County Fair Association/Yavapai Downs Race Track.

Try these recipes for your next gathering compliments of Chef Don

Apple Salsa With Cilantro

1 cup diced unpeeled red apples
1/4 cup diced red onion
1/4 cup minced Anaheim Chile pepper
1/2 jalapeno pepper, seeded and minced*
2 Tbsp fresh lime juice
1/4 bunch fresh cilantro de-stemmed rough chopped
sea salt for personal taste

*wear gloves when handling the jalapeno pepper to avoid skin/eye irritation.
combine apples, onion, chili/jalapeno peppers, lime juice, black pepper in a large bowl; mix well. cover with plastic wrap and refrigerate at least 30 minutes.

Chilled Watermelon Soup

6 #‘s diced watermelon
2 Tbsp chopped fresh mint
2 Tbsp fresh lemon juice
1 cup Riesling with 1/4 cup sugar
1 tsp chopped ginger

combine all ingredients and puree. let sit 1/2 hr. and strain soup, save pulp. chill soup at least 1 hour.
presentation: freeze soup bowls, pour soup, add a dollop of pulp in center.serve with sides of crumbled feta cheese and dark chocolate balsamic vinegar.
